Fill The Cookie Jar

This one is for Fill The Cookie Jar:

For this months theme it was Father's Day or whatever the month of June inspired you with.

For me June always means it's time for Fresh Local Strawberries.  So I went in search of Strawberry Cookie Recipes to try and came up with this one:
Fresh Strawberry Cream Cheese Cookies.

One thing you will note here is that my cookies are rather, pink in color.
Apparently the step where you mix in the flour and strawberries didn't work as well as it should have.  Anyway the cookies still tasted great so I decided to post them anyway.






Ingredients
  • 1 1/4 cup flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/4 cup unsalted softened butter
  • 4 ounces cream cheese softened
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 3/4 cup fresh strawberries, diced
  • 1-2 tablespoons flour
  • 1/2 - 3/4 cup white chocolate chips
Instructions
  1. Preheat oven to 350 and line cookie sheets with parchment paper.
  2. Cream together the cream cheese, butter and sugar until light and fluffy. Add egg and vanilla and mix well.
  3. Gradually add flour, a baking powder, and salt and mix until combined.
  4. Stir in white chocolate chips.
  5. Mix strawberries and 1-2 tablespoons of flour together gently. Add to the cookie batter stirring gently.
  6. Put cookie dough in the refrigerator for 10-15 minutes.
  7. Drop by teaspoonful onto cookie sheets.
  8. Bake about 13 - 15 minutes until the edges get a little golden.
  9. Let cool a few minutes and then remove from cookie sheets to a baking rack to cool completely.

  17. I think they look delicious! I can never get that far with fresh local strawberries. They go straight from the pint carton to my mouth. Tried to get some at our local farmers' market last Wednesday, but the line was insanely long and I didn't want to wait. Guess we all had the same idea. Maybe next Wednesday.
